At the cheese counter
“This is a dependable classic blue—creamy enough for dressing and bold enough for burgers.”
In the kitchen
MELTING: Very good – dependable for burgers, dressing, and blue-cheese sauce. GRATING: Good when well chilled, though crumbling is easier. SHAVING: Good when very cold – use a vegetable peeler for short, rustic curls.
