More about this cheese

History & producer
La Casearia Carpenedo, Veneto, Italy Antonio Carpenedo created Blu '61 as a tribute to his wife, Giuseppina, and their 1961 wedding year. The family affineurs finish the cheese with local Raboso Passito wine and cranberries, joining Veneto's wine and cheese traditions.

At the cheese counter
“Blue 61 is luxurious buffalo blue with a fruity wine finish—dramatic but surprisingly creamy.”

In the kitchen
MELTING: Excellent – becomes lush and creamy; use gently so the wine-fruit character remains. GRATING: Not recommended – spoon, spread, or crumble instead. SHAVING: Not recommended – too soft and creamy; serve in small spoonfuls or crumbles.
