More about this cheese

History & producer
Point Reyes Farmstead Cheese Co., California The Giacomini family turned its Tomales Bay dairy farm toward artisan cheese and launched Original Blue in 2000. Now led by the family’s second generation, the farmstead creamery makes it from milk produced on its own coastal ranch.

At the cheese counter
“This is a fresh-tasting, coastal California blue with a clean salty snap and creamy finish.”

In the kitchen
MELTING: Excellent – creamy and bold for steak sauce, burgers, pasta, and potatoes. GRATING: Good when very cold, though it crumbles naturally. SHAVING: Good when very cold – shave lightly for salads, steak, or roasted vegetables.
